Abstract:Hyperspectral imaging (HSI) technology has the advantages of traditional imaging and spectroscopy techniques, it can obtain the spatial and spectral information of the tested objects simultaneously which reflect its external and internal qualities, respectively. In recent years, HSI is widely used in the quality nondestructive testing (NDT) of fruits and vegetable. In this paper, the latest development of HSI technology applied in the quality NDT of fruits and vegetables is presented, which is based on the principle, exploration and application of HSI in this field.
